I don’t know how easy this would be to implement, but I think it would both be really cool and really terrifying (as well as make a lot of sense behaviourwise) if the Collector could reach into the rock formations on the sea floor of the trench to grab a player trying to hide from it. Or just reach into smaller areas in general really. Anywhere their arms can fit that it’s body can’t.
I don’t think it makes a whole lot of sense how if the Collector is chasing you, you can just hide between the rocks and be fine when the Collector should still very much be capable of reaching you there.
Maybe you could even add small caves that are a little deeper, or tunnels (perhaps a new species that could dig burrows in the ocean floor, kind of like rabbits) that you can swim into. So when the Collector tries to reach in after you, you have to swim in deep enough to get out of it’s reach. A little like that scene in Little Nightmares 2, when the Teacher chases the player through the vents.

Yeah, and if there is a cave with two entrances it’ll try to corner you :)
