Elongated sanddollar-like organism that settles on and moves along the surface of sand along the shores, and burrows when threatened. Unlike earthly sand dollars which are found under the sea in shallow shores, these guys settle where the tides come and go, discoverable in the sand above water where they are alone and undisturbed. They can somewhat camouflage themselves against their backdrop, but primarily find home in the white sands. On the world of Subnautica 2 they could be harmless filtration organisms/bottomfeeders. To get close to them em you gotta sneak and have stasis rifle, or they’ll burrow and get away before you can grab em! Use em as biofuel or process them, as they are chock full of silica!

Shoutout to Sand Dollars, gotta be one of the most underrated sea creatures of all time, great suggestion! The only thing I disagree about this post is the unusually high gameplay complexity of this creature and how you said we should approach it.
